About this coffee

This Colombian green coffee was decaffeinated using the "sugar cane" process, which we intentionally selected due to its gentleness in comparison to other common methods and its ability to retain the coffee's distinctive qualities. This exceptional microlot was processed with the innovative water pillow technique, pioneered at our El Fénix farm in Quindío. By using cool water over a sealed layer of plastic, the process creates a vacuum, locking in the coffee cherries while keeping fermentation temperatures low and stable. The cherries rest in this oxygen-free environment, developing rich flavors over an extended period. Post-fermentation, they’re carefully depulped and dried on raised beds for up to 20 days for anoxic washed profiles.
