About this coffee

The process of drying natural coffees in Marcala is challenging due to the humid climate and rainfall during the drying season. Moises Herrera, Marysable Caballero's husband, has worked hard to perfect the procedure. When processing coffees as naturals, ripe cherries are picked and dried on covered raised beds. Initially, the layer of cherries must be thin, and as the coffee dries, the thickness of the dried cherries can be increased. Depending on the temperature, the drying time of the cherries can vary from 20 to 40 days. During the day, when it rains, and at night, the coffee cherries are stacked and covered.

The Producers

Marysabel and Moises Herrera, a married couple, manage a drying mill in Xinacla and an area of approximately 200 hectares of coffee farms. They are renowned for producing high-quality coffees, and their dedication and hard work have contributed to the increasing recognition of Honduras as a source of specialty coffees. They devote significant time and resources to obtaining new equipment and planting new coffee varieties to continually enhance the quality of the coffee. In 2016, they achieved first place in the Cup of Excellence, and the highest price per kilo ever paid for Honduran coffee.

Sustainability

The Caballeros are highly dedicated to the sustainability of their farms. Significant attention is given to soil amendment to guarantee a beneficial growing environment for their coffee plants. Organic fertilizer is produced from cow and chicken manure combined with coffee bean pulp and other organic materials on the farms. This is supplemented with artificial fertilizer to provide the necessary nutrients to the coffee plants. All water utilized in the process is filtered prior to being released back into the environment.
